Asparagus day starter

A splendid choice for any intimate special breakfast with your sweetheart. You can also have much fun creating this breakfast, day-starter when asking your partner to give you a hand and help you with this fun project!

Servings: 2

You need:

  • 1 bunch of fresh asparagus spears asparagus day starter
  • a knob of fresh butter
  • 2 soft-boiled quails’ eggs
  • salt and pepper, to taste
  • 1 teaspoon chives, finely chopped


Trim the bottom end of each asparagus spear. Heat a frying or grill pan until smoking.

Place the asparagus onto the pan and cook for 1-2minutes, rolling each spear occasionally until brown spots appear and the color turns to dark green.

Add the butter and continue to turn until they are evenly coated and become glossy.

To serve the asparagus day-starter:

Transfer the asparagus onto your platter. Place the quails’ eggs on the side; season, to taste with salt, freshly ground black pepper and chives. Add extra butter, to taste. Serve immediately.

– Look for firm asparagus stalks with firm tips.

– Check also their bottom ends; if they are dried up, they have been sitting around for too long.

– The asparagus spears we chose where so tender that it didn’t take us more than 1,5-2minutes to cook. If you buy thicker spears you need to cook them longer, about 3-5minutes maximum.

– We used a potato masher to press them gently down.

How to trim asparagus bottom ends:

Grasp each asparagus and bending it gently until it snaps at a natural point.
