Crunchy moorish style salad (oven baked zucchini)

Crunchy moorish style salad gets a Mediterranean flavor from pure and delicate ingredients, easy to find, plus simply to make. It’s a must to drizzle plentiful of olive oil and vinegar to this light salad tossed together with the beautiful green and fresh zucchini. Consider it also as a perfect side dish for any summer meal.

Servings: 2

You need:

  • 2 zucchini, preferably organic chrunchy moorish style salad
  • 2 courgettes, preferably organic
  • ½ clove garlic, finely chopped
  • 20g hazelnuts, roughly chopped
  • 20g golden raisins, roughly chopped
  • salt
  • extra virgin olive oil
  • red wine vinegar
  • 2-3 fresh mint leaves,
  • 2-3 fresh basil leaves

Steps:

Preheat the oven to 180°C (356°F). Chop the zucchini and courgettes into diagonal slices.

In a bowl combine all the ingredients, except mint and basil. Season with salt and pepper to taste.

Toss well and place them in an oven safe skillet or line them on a baking sheet with parchment paper.

Bake for 10-15minutes.

Add the mint and basil.

Drizzle some olive oil and red wine vinegar.

Serve immediately or cover and chill for at least 1 hour.

Originally the zucchini must be thinly sliced. For a crunchier ”effect” slice them about 1,5cm (0,60inches) thick.
