Gluten free cinnamon biscuits

Kid approved and gluten-free (tiny little cute) cinnamon biscuits will fill your recipe book pages with healthy ideas, that can be made really-really fast.

You need:

  • 1 cup gluten-free flour* gluten free cinnamon biscuits
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon (powder)
  • 3 tablespoons clarified butter, melted
  • 2 tablespoons Greek thyme honey
  • 1 egg (optional)


Preheat the oven to 170°C (338°F). Line a baking sheet with parchment paper. Combine all the ingredients in a bowl.

Create equal dough portions using measuring spoons (in this case I used a teaspoon). Roll into balls, place on the baking sheet. Bake for 12-15 minutes.

Turn the heat off. DO NOT remove from the oven and let cool (for crunchy biscuits).

Gluten free flour: Instead of buying store-bought gluten-free flour, I used a mix of organic almond and amaranth flour.

Why using measuring spoons?: It’s a trick to make equal dough portions. Don’ t be afraid to use a teaspoon. The dough will be risen while baking and the outcome will be bite-sized biscuits.

    I have been encouraged to go gluten free. Not quite there yet but I have my eye out looking for gluten free recipes to incorporate. This is one to hold on to.
