Green beans with soya mince

Fresh or frozen green beans? Green beans are available all year long and that’s a good reason to call this main course as a ”four seasons dish”.

Servings 4

You need:

  • 1 kg fresh green beans
  • 120 grams soya mince
  • 3 tablespoons  olive oil
  • 2 potatoes, peeled
  • 2 tomatoes, diced
  • 3 sprigs parsley, finally chopped
  • 1 onion, finally chopped
  • kosher salt
  • freshly ground black pepper
  • 1 teaspoon garlic puree
  • water


Soak soya mince for 10 minutes and drain the remaining water. Scoop the potatoes to give an irregular shape.

In a deep pot, sizzle the onion together with the potatoes, using 1 tablespoon olive oil .

Cook until the onion starts to turn translucent. Add the tomatoes, garlic puree, soya mince. Stir gently.

Add the green beans, parsley and give it a good stir. Pure in water until the beans are covered more than half. Partially cover the pot. Raise the heat in medium-high and cook the veggies through (at least 25 minutes).

Turn the heat off, season with salt and pepper to taste. Drizzle with the oil (2 tablespoons left).

Stir to mix one last time. Let cool and serve.
