Grilled eggplant salad

When it comes to eggplants mother earth took a good care of us, by providing this beautiful purple vegetables. Within a moment, two recipes came out of my mind and could not decide which one should be published. The first is inspired by my grandfather, when he was cultivating both eggplants and tomatoes in his garden. The second one is actually a modern twist of my grandmothers recipe. So.., let’s see these two different versions of grilled eggplant salad right away:

Servings 6-8

Version No.1: Grandpa inspiration

You need:

  • 3 eggplants, large size
  • 2 tomatoes, ripe – medium size
  • curry powder
  • ground ginger
  • ground cumin
  • curry powder
  • salt
  • extra-virgin olive oil


Preheat the oven to 170°C

Dice the tomatoes. Set aside.

Half the eggplants. Scoop the inside without taking it off completely and season each half with a pinch of curry powder, ground ginger. ground cumin, curry powder and salt. Finally add the diced tomatoes. Combine the two halves again as one and arrange them in a baking dish.

Grill until tender, about 12 minutes each side.

When ready peel them while they are still hot.

Use a pestle and mortar to mash your grilled eggplant salad. When served, drizzle with extra-virgin olive oil.

Version No.2: Grandma’s twisted eggplant salad recipe

You need:

  • 3 eggplants, large size
  • 1 shot of vodka
  • extra-virgin olive oil
  • 1 tablespoon garlic puree
  • 1 tablespoon Greek tahini (pure sesame)
  • 1 lemon, zested – juiced
  • salt
  • freshly ground black pepper
  • parsley sprigs for garnish


Preheat the oven to 170°C.

Half the eggplants. Brush them with vodka and olive oil. Grill until tender, about 12 minutes each side. Remove from the grill to a cutting board. Let cool slightly and peel. Once peeled, roughly press with a fork.

In a small bowl, whisk together the garlic puree, tahini and lemon juice. Drizzle some olive oil. Add the grilled eggplants. Season with salt and pepper, to taste.

Garnish with lemon zest and parsley sprigs to serve.
