Light red coleslaw

Looking for a salad or side dish? Do you desire something refreshing and balanced to eat? Either way it’s a ”must” dish for your big thanksgiving menu. The guests will love both the taste and vibrant colour.

Servings: 2

You need:

  • 2 cups red cabbage, shredded
  • 1 shallot, sliced
  • ½ green apple, diced
  • 1 tablespoon black currants
  • 1 tablespoon dried cranberries
  • 1 tablespoon walnuts, chopped
  • fresh coriander

for the dressing:

  • 2 tablespoons Greek yogurt*
  • 2 tablespoons olive oil
  • 1 teaspoon honey*
  • a pinch of salt
  • freshly ground black pepper

Steps:

Soak the shallot, black currants and dried cranberries in hot water until the last two are plumped up. Chop them finely.

Whisk together the dressing ingredients in a large serving bowl.

Add rest of ingredients.

Toss until well combined.

 

* Respectively substitute these ingredients with soy yogurt and maple syrup.

    A very good alternative recipe of the classic coleslaw salad!
    Congratulations!
    I would suggest:
    – 2 or 3 tablespoons of walnuts because they are very tasty and a good source of vegetal ω-3 fatty acids.
    – 1/2 cup carrot shredded for a more colorful salad and of course more vitamin A.
