Mashed sweet potatoes and veggie skewer

Add nutritional value sweetness in everyday life, by using this winter superfood, which provides your body both with antioxidant and low-calorie elements. That means this veggie root has to be included in your weight loss list. Isn’t it that great?Furthermore, as you understand, we are not talking about simple starches and besides the name ”sweet” they might be a beneficial food for diabetics too.

Servings: 2

You need:

  • 2 red sweet potatoes
  • 2 tablespoons chives, chopped
  • 2 tablespoons fresh coriander, chopped
  • salt and pepper

for the veggie skewers:

  • 4 mushrooms
  • 4 cherry tomatoes
  • 2 rosemary sprigs

Steps:

Cut each potato in 3 pieces. Roast in the oven until cooked through.

10 minutes before turning off the heat place the veggie skewers in the oven too (make skewers just by sticking the tomatoes and mushrooms in the rosemary sprig).

Mash the sweet potatoes in a large bowl.

Add the chives, coriander. Season with salt and pepper to taste.

Give it a good stir and serve.
