Mozzarella over sprouts nest

Feel free to experiment with your own combo of sprouts, using them as base to place this delicate ciliegine (mozzarella) cheese. On one hand fresh mozzarella bites are a source of protein and fat to include in your diet. On the other hand, those super-power vitamin source hidden in sprouts, spinach and pomegranate form a good-for-you green salad. As a result you get the perfect balance!

Servings: 3

  • 150g ciliegine (mozzarella)* mozzarella over sprouts nest
  • lentil, mung bean, wheat sprouts 
  • a handful of spinach
  • ½ pomegranate seeds

for the vinaigrette:

  • ½ pomegranate, juiced
  • ½ lemon, juiced
  • 2 tablespoons extra-virgin olive oil
  • a pinch of salt

Steps:

Place pomegranate juice, lemon juice, olive oil and salt in a medium bowl, then whisk until well combined.

Add the spouts, spinach and pomegranate speeds to the bowl. Toss to coat evenly in dressing. Place the ciliegine mozzarella on top and serve immediately.
