Paprika flavored bulgur and warm zucchini salad

After a long run, cooling down properly is essential. Gain fibers and proteins in a 10 minutes recovery recipe, without worrying so much what to cook.

Servings: 2

You need:

  • 100g medium bulgur
  • 220g (250ml) water
  • 1 tablespoon ground paprika
  • 1 teaspoon dried mint

for the warm salad:

  • 1 tablespoon olive oil
  • 100g zucchini, diced
  • balsamic vinegar (optional)
  • salt and pepper to taste


Boil a small pan of water and soak the bulgur for 10 minutes. Set aside.

Meanwhile prepare the salad. Heat the oil in a skillet and sauté the zucchini for 3 minutes.

Season with salt and pepper. Drizzle in balsamic vinegar and set aside.

Fluff the bulgur using a fork. Add the ground paprika and mint.

Toss well and serve zucchini as side dish.

Have in mind when drizzling balsamic vinegar in the zucchini, the colour will change to a darker shade.
