Potato boats on green broccoli sea

Simply boiled and then dressed with fresh lemon vinaigrette, white potatoes complement your meals perfectly. Choose round shaped and similarly sized potatoes so they will cook in the same time, but look like cute into your plate. No salt is needed, just pick the best of ingredients from your green grocer or local farmer’s market.

Servings: 4

You need:

  • 8 white potatoespotato boats on green broccoli sea
  • 8 tablespoons fresh or frozen peas
  • 1 broccoli bunch, trimmed into florets
  • 1 carrot, peeled, cut into sticks
  • 1 tablespoon Greek  olive oil
  • ½ lemon, juiced, unwaxed


In a large pot of boiling water, cook potatoes until tender, up to 15 minutes*.

Let them cool down a bit and peel them.

Meanwhile at the same pot add the peas, broccoli, and carrots.

Blanch them or boil for 5 minutes until tender. Drain in a colander, rinse under cold water.

How to assemble the potato boats:

Cut potato tops using a knife. Scoop out the center of each potato with a melon baller, and fill about 1 teaspoon peas.

Add one carrot stick onto each potato. Place some broccoli florets to your plates.

Transfer the boats over the broccoli along with Greek extra-virgin olive oil and lemon juice, and serve.
