Sausage salad

You need:

  • 2 good quality beef or wild boar semi-dry sausages, oregano flavor
  • extra-virgin olive oil
  • 6 red cherry tomatoes
  • 6 orange cherry tomatoes
  • 2 parsley sprigs
  • 3 tablespoons olive oil
  • 1 onion, small size
  • 5 pickled onions
  • 1 teaspoon pomegranate vinegar
  • Cretan graviera cheese (Gruyere), saved

Steps:

Cut each sausage in three pieces with your own hands. Slice the onion into 1/4-inch slices.

Heat the oil in a small pan. Add both sausages and onion. Fry them for 3 minutes. Stir with a wooden spoon occasionally, while you prepare the other vegetables (half the tomatoes, roughly cut all parsley sprigs).

When finished, bring everything into a bowl. Add the pickled onions and drizzle pomegranate vinegar. Stir well and divide among 2 large plates.

Scatter graviera cheese at the top.
