Small rice bites

What is a guest to do when he/she comes across an indoor soiree filled to this pretty brim with lucullus treats from the ”house-cook”? I share those ”small rice bites”, our rice bites, to enrich your soiree menu. So without further ado, I present the most delightful starter you have ever tasted. 

Servings: 20 small bites (at least)

You need:

  • 200g sushi rice 
  • 1 ½ tablespoon mayonnaise
  • 1 tablespoon rice vinegar
  • 2 tablespoons sesame oil
  • 1 teaspoon soy sauce

for the garnish:

  • 100g premium smoked salmon fillet
  • black sesame seeds
  • chives
  • lemon


Cook sushi rice according to package instructions. Add the mayonnaise, rice vinegar, sesame oil, soy sauce and mix to combine.

Creating the shape: Use two teaspoons as molds. Scoop a generous amount of rice into one teaspoon. Gently press with the second spoon against the rice creating a smooth, rounded surface where the rice molded to the spoon. Form an ”almond”-oval shape . Place in fridge until ready to use.

How to serve your small rice bites:

When ready, slice salmon in small strips. Slice lengthwise down the middle of the lemon. Cut the lemons into triangle bites (as they are formed when sliced) and chives on the diagonal. Finish garnishing after sprinkling some black sesame seeds on top.
