Zucchini Fritters

The best zucchini fritters ever! A gluten free yummy recipe to make over and over again.

Servings 4

You need: 

  • 2 large zucchini, grated 
  • salt
  • freshly ground black pepper
  • 1 cup Indian gram flour, sifted
  • 2 spring onions, finely chopped
  • 1 egg, beaten
  • 2 tablespoons plain yogurt
  • 2 tablespoons Greek tahini (pure sesame)
  • 1 cup finely chopped fresh mint
  • 1/2 lemon zested
  • oil (100% pure refined corn oil for frying is preferable)
  • paper towel

 Steps: 

Place grated zucchini in a colander, sprinkle with salt and let stand at least 25 minutes, or until it loses its juice.

In a large bowl, place all the ingredients along with zucchini and mix well. Adjust the seasonings.

Heat oil in a heavy saucepan. Drop batter by tablespoons into oil. Fry on all sides, until golden brown (estimate 2-3 minutes each side).

Drain on paper towel.

How to serve your gluten-free zucchini fritters:

Served warm, with cool yogurt-tahini sauce.
